Sausage Grits

SAUSAGE AND GRITS

 

 

 2 cups water

1/2 cup quick-cooking grits

4 cups shredded sharp Cheddar cheese

4 eggs, beaten

1 cup milk

2 pounds mild pork sausage, cooked, crumbled, and drained

Try hot sausage if you have the nerve and be sure to cook in an iron skillet.

 

Bring water to a boil; stir in grits.  Return to a boil; reduce heat and cook 5 minutes, stirring occasionally.

 

Combine grits and cheese; stir until cheese melts.  Combine eggs and milk; mix well. Add a small amount of hot grits mixture to egg mixture, stirring well. 

Stir egg mixture into remaining hot grits mixture. Add sausage, stirring well.  Pour into a lightly greased 12- x 8- x 2-inch baking dish.  Bake at 350 degrees for 30 minutes or until set.

 

If this is too much work, you can always cook everything separately and put them together in your mouth.

 

 

All of this reminds me of the old story about commitment and involvement.  As I heard it, a southern high school football coach was lamenting the fact that he had a lot of people involved in the football program, but not enough people committed.  He said it was like a bacon and eggs breakfast.  The chicken was involved in the breakfast, but that HOG was committed.


So obviously we owe it to the hog to enjoy this recipe.
