Fried Catfish

Classic SOUTHERN Fried Catfish

 

You can fix catfish in a lot of ways and it’s always good, but if you want real honest to goodness SOUTHERN Catfish this is the best way to start.     

 

3/4 cup yellow cornmeal

1/4 cup flour

2 teaspoons salt

1 teaspoon cayenne pepper

1/4 teaspoon garlic powder

4 catfish fillets or whole catfish

vegetable oil

 

Combine cornmeal, flour, salt, cayenne pepper, and garlic powder.  Coat catfish with mixture, shaking off excess.  Fill deep pot or 12-inch skillet half full with vegetable oil.  Heat to 350-degrees.  Add catfish in a single layer, and fry until golden brown, about 5-6 minutes, depending on size.  Remove and drain on paper towels.  Makes 4 servings.  (Of course you are gonna want a whole lot more, so fix accordingly.) 

 

Catfish is a heap better when cooked outside on one of those gas fryers.  Hushpuppies are a must and should be fried in the same pot as the fish.  Corn on the cob, cole slaw, baked beans, and even fries go well with Southern Fried Catfish.

 

The Catfish Institute wants everyone to know that there are many ways to enjoy catfish.  Of course it is hard to believe you will never tire of fried catfish.
